Need a quick, low carb, healthy snack or meal? This is your go-to! believe it or not - this is Erin’s very own recipe, because she loves deep fried anything!
- ½ - ¾ pound Oyster mushrooms torn into bite size pieces
- ¼ cup avocado oil
Dry batter: (mix in a medium bowl)
- 1.5 cups arrowroot flour
- 1 cup parmesan cheese
- 1 t garlic powder
- 1 t onion powder
- 1 t sea salt
- ½ t cumin
- ½ t smoked paprika
- ½ t curry powder
- 2 eggs beaten
- 3 T arrowroot flour
- ⅓ cup water
- Under medium-high heat in a large cast iron pan or frying pan (or you can use an air fryer if you wish to omit the oil), heat the avocado oil until hot but not smoking.
- One at a time, dip the Oyster mushroom pieces ONE TIME into the wet batter, then transfer to the dry batter ONE TIME until coated and fry until golden brown and crispy, 2-3 minutes per side. Work in batches if needed.
- Transfer the fried mushrooms to a paper-towel lined plate, sprinkle with extra sea salt if needed and garnish with fresh lemon or dip in your favorite dipping sauce. I personally like the Primal Kitchen line of dressings (made with avocado oil) and Green Goddess is my favorite!
