Parmesan Fried Oyster Mushrooms

Need a quick, low carb, healthy snack or meal? This is your go-to!  believe it or not - this is Erin’s very own recipe, because she loves deep fried anything! 

  • ½ - ¾ pound Oyster mushrooms torn into bite size pieces
  • ¼ cup avocado oil

Dry batter: (mix in a medium bowl)
  • 1.5 cups arrowroot flour
  • 1 cup parmesan cheese
  • 1 t garlic powder
  • 1 t onion powder
  • 1 t sea salt
  • ½ t cumin
  • ½ t smoked paprika
  • ½ t curry powder
Wet batter: (mix in a separate medium bowl)
  • 2 eggs beaten
  • 3 T arrowroot flour
  • ⅓ cup water 


  1. Under medium-high heat in a large cast iron pan or frying pan (or you can use an air fryer if you wish to omit the oil), heat the avocado oil until hot but not smoking.
  2. One at a time, dip the Oyster mushroom pieces ONE TIME into the wet batter, then transfer to the dry batter ONE TIME until coated and fry until golden brown and crispy, 2-3 minutes per side. Work in batches if needed.
  3. Transfer the fried mushrooms to a paper-towel lined plate, sprinkle with extra sea salt if needed and garnish with fresh lemon or dip in your favorite dipping sauce. I personally like the Primal Kitchen line of dressings (made with avocado oil) and Green Goddess is my favorite!
